Mrs. Metcalfe’s Rudolph peanut butter cookie recipe

Jason, Mrs. Metcalfe’s son, last year with his reindeer peanut butter cookie. This is a family recipe that they usually do on the holidays.

When it comes to the holidays everyone has their favorite dessert and according to Mrs. Metcalfe, a new faculty member of the history department at Loretto Academy, she has a holiday recipe that everyone will love. 

Her traditional holiday recipe is made with lots of love and it has only 13 ingredients. 

The recipe makes 48 cookies and here are the ingredients needed:

  • ½ cup of peanut butter
  • ½ cup of butter 
  • ½ cup of sugar 
  • ½ cup of brown sugar
  • 1 tsp of vanilla extract
  • 1 egg 
  • 1 ⅓ cup of flour 
  • 1 tsp of baking soda
  • ½ tsp of salt 
  • 48 chocolate Hershey kisses
  • 48 red M&M’s 
  • 96 white edible sugar pearls 
  • 48 mini twist pretzels 

Follow this directions: 

  1. Break pretzels into pieces to use as antlers 
  2. Then preheat oven to 350 degrees 
  3. Mix the peanut butter, butter, sugar, and brown sugar. 
  4. After mixing add the egg and vanilla extract and beat until smooth. 
  5. Whisk together the flour, baking soda, and salt in a separate bowl. 
  6. Slowly add the dry ingredients to the creamy mixture until everything is incorporated.
  7. Roll into ½ – ¾” balls and place on a cookie sheet several inches apart  
  8. Sprinkle with sugar and gently make a thumb print slightly off the center of each cookie. 
  9. Then bake for 12-14 minutes 
  10. Take them out of the oven 
  11. Place a Hershey kiss in the indention of each cookie for the nose.
  12. Then insert two white sugar pearls above the nose for it to be the eyes. 
  13. Insert 2 pretzel pieces at the top to be the antlers.
  14. After finishing the cookie’s details, place them back in the oven for around 30 seconds to slightly soften the Hershey kiss.
  15. Remove from the oven and place the M&M (letters face down) on top of the Hershey kiss.
